Curried chickpeas

If you’re after a quick and tasty vegetable side dish or looking for a way to spice up your lunchbox, this is IT! Deliciously spiced curried chickpeas make a great accompaniment to grilled meat or fish or just a superb addition to a meat-free meal, all in lightening bolt time. No doubt the ingredients list is already in your store cupboard too, another tick!

With little time during my week nights to leisurely make dinner, quick and healthy recipes like this are my saviour. This recipe serves 4 – or two with leftovers for the lunchbox.

Curried chickpeas

A tin of chickpeas, rinsed
Half a red onion, diced
Two ripe tomatoes, diced
Two garlic cloves, finely chopped
1 tsp garam masala
1 tsp turmeric
1 tsp paprika
1/2 tsp chilli powder
1/2 tsp cinnamon spice
1/2 tsp ginger spice
1 tsp salt
1/2 cup water

Fry the onion and garlic in a little vegetable oil until translucent. Add all of the spices and fry for a further few minutes, taking care not to burn them. Throw in the chickpeas, coating them in the spice mix. Add the tomatoes and stir for a few minutes before loosening up the chickpeas with the water. Add more water to your liking. Season and serve. Simple!
