I gave up trying to find the perfect granola from the supermarket (too nutty, too fruity, too oaty!) and settled on making my own. It’s so quick and simple to whip up and the smell of this oaty mixture baking in the oven is quite lovely.

Tailor the ingredients to suit your tastes but after much experimenting, the recipe below is my favourite mix of fruit, nuts and seeds. I like to mix half and half of larger and finer rolled oats for a nice texture.

This energy-boosting granola is a great way to start the day with milk and is also delicious sprinkled over yoghurt.

Granola

2 tbsp vegetable oil
100ml maple syrup
2 tbsp honey
1 tsp vanilla extract
300g rolled oats
50g sunflower seeds
50g pumpkin seeds
50g chopped or flaked almonds
50g chopped hazelnuts
100g dried berries
50g chopped dried apricots
50g coconuts flakes or desiccated coconut

Heat oven to 150C/fan 130C/gas 2. Mix the oil, maple syrup, honey and vanilla in a large bowl. Tip in all the remaining ingredients, except the dried fruit and coconut, and mix well.

Tip the granola onto two baking sheets and spread evenly. Bake for 15 mins, then mix in the coconut and dried fruit, and bake for another 15 mins.

Give it a good mix before leaving to cool on the tray. Once cooled, pop the granola in an airtight container, it will keep for up to a month.
