Asian smoked salmon

With an abundance of smoked salmon leftover from the festive season, this Asian style smoked salmon is fresh and zesty paired with the cucumber, avocado and lime. It’s utterly delicious. It makes a change from the usual scrambled eggs or cream cheese bagel combo, and makes a great starter or light lunch. I adore the dressing and drizzle it into all kinds of salads!

Asian smoked salmon
1 pack smoked salmon
2 large just-ripe avocados, peeled, stoned and diced
½ cucumber, deseeded and diced
handful coriander leaves

For the dressing
2 tbsp caster sugar
A pinch of chilli flakes
zest 2 limes
Juice, 2 limes
Juice, half a lemon
1 tbsp sesame oil
2 tbsp light soy sauce
Black pepper to season

Mix the ingredients for the dressing. It will keep in the fridge overnight, if you’re looking to make it in advance.

Pour half of the dressing over the cucumber, avocado and coriander mix.

To serve, arrange the salmon onto plates, three slices per person works out well for a starter. Heap the salad mix on top of the salmon and drizzle a little more of the dressing and serve.
